A Chef's Dinner at Newly Redesigned L'Ermitage Beverly Hills

Step inside a beautiful chef’s dinner at L’Ermitage Beverly Hills to fête the unveiling of the hotel’s newest signature eatery, Costa Covo, and sleek lobby lounge Alcova—complete with a custom Negroni cart to serve up bespoke beverages tableside. Led by Executive Chef Todd Matthews and designed by New York-based studio Champalimaud Design, the refreshed space is the perfect place to slip away and soak in some quiet luxury—flute of bubbles in hand.

With a sumptuous spin on Italian favorites and Mediterranean cuisine, each plate—from primo pastas and housemade foccaccia to a buttery Branzino—is prepared with traditional and seasonal ingredients, served alongside curated cocktails from a robust beverage menu and special selections from the elevated wine list.

Come for the coastal cuisine and look forward to the debut of the property’s newest poolside paradise, Pozo, opening in January 2025 as part of the 2 Michelin Key hotel’s recent brand refresh.

“We’re excited to welcome our guests and local community to experience what we’ve been working on behind the scenes here at L’Ermitage,” shared Executive Chef Todd Matthews. “At Costa Covo, we’ve focused on drawing a spotlight on the fresh, vibrant ingredients home to the Southern California region in a coastal Italian lens, while Alcova is where you can wind down with a cocktail in hand over shared plates. For us, we hope to create more than a meal, where people can connect and relax in a warm, welcoming atmosphere.”

Located on the left-hand side of the hotel’s newly redesigned lobby space, Costa Covo offers a refreshingly simple and delectable take on coastal Italian cuisine with subtle hints to the shared bounty of the Mediterranean Sea. Italian plates with classic and seasonally inspired ingredients are served alongside daring cocktails and a wine list highlighting new-world Italian and French varietals. Executive Chef Matthews brings his diverse culinary expertise to Italian cuisine, from market-fresh crudo and perfectly prepared cuts of beef to artisanal desserts. The menu highlights his passion for handmade pasta, featuring standout creations such as the Grano Arso Orecchiette in garlic sauce with shishito peppers, bottarga and pangrattato and the Tagliolini al Limone with preserved lemon, Parmigiano Reggiano topped with caviarf or a refined touch.

The restaurant seamlessly blends European elegance with California modernism, creating a refined yet welcoming ambiance. Drawing inspiration from art director Cedric Gibbons, Costa Covo pays homage to Hollywood’s golden age through hand-applied silver leaf ceilings, fluted pilasters, and bespoke bar chairs. A striking landscape photograph by Amir Zaki joins a ceramic commission by Roger Herman to bring contemporary character into the space. Rich accents of velvet persimmon are enhanced by textures of lacquer and onyx, adding layers of warmth, while furniture inspired by Jean-Michel Frank and Gio Ponti, complemented by soft, residential-style lighting, invites guests to feel at home. For an alfresco dining option, Costa Covo also features an intimate outdoor seating space surrounded by lush greenery. The restaurant can accommodate up to 95 guests with partial buyout opportunities available.

Situated on the right-hand side of L’Ermitage’s lobby space lies the hotel’s new lounge, Alcova, which will offer an intimate escape accommodating only up to 16 guests. With creative direction led by Executive Chef Matthews, at Alcova, guests and locals alike will savor specialty drinks and elegant small plates such as Sterling Osetra Caviar with Potato Chips and Whipped Crème Fraiche; Pecorino Toast with Whipped Ricotta and Truffle Honey and Arancini filled with Smoked Mozzarella and San Marzano tomatoes. The experience is completed with a custom Negroni trolley, that will serve specialty cocktails tableside, providing a delightful pause in the day and a moment of unexpected pleasure.

Alcova transitions from a comfortable living room in the afternoon, ideal for small meetings and conversations, to a candlelit lounge in the evening, where a custom fireplace sets a warm and inviting atmosphere. Its design features green velvet sofas inspired by Jean-Michel Frank, 1940s walnut and leather armchairs and walnut flooring, creating a timeless and chic aesthetic. A yin and yang wall provides an element of privacy, while a curved alcove showcases a glazed ceramic piece by California artist David Hicks, adding a focal point to the room.

“We approached the design for L’Ermitage Beverly Hills with a vision of creating a series of intimate, stylish spaces that embody the property's residential feel, perfect for both entertaining and fine dining, while showcasing a thoughtfully curated art collection,” said Ed Bakos, Partner & CEO, Champalimaud Design. “Inspired by the elegance of the 1920s and 30s, we chose sumptuous materials and refined proportions that balance comfort with craftsmanship, emphasizing simplicity and sophistication.”

DIOR x Beverly Hills Hotel: A Spectacular Summer Soirée

It was nothing short of an absolute pleasure to attend the most spectacular summer soirée, hosted by the House of Dior and the iconic Beverly Hills Hotel—in celebration of the life and legend of hâute couturier Christian Dior, and three exquisite Dior Beauty fragrances from La Collection Privée.

With a carefully curated masterpiece of a menu that paid homage to the fêted French fashion designer’s historical heritage and gastronomic preferences, and a perfect pairing of pours to complement the Mediterranean coastal cuisine’s fresh flavors, with nods to its most luxurious locales (while mindfully incorporating the top notes of each fabulous fragrance) this seasonal supper was truly a feast for (all of ) the senses.

The al fresco affair was hosted in the hotel’s private garden, kicking off with a welcome glass of Ruinart Blanc de Blanc as guests entered the peaceful patio of the storied and stuccoed pink palace, taking seats at a beautiful banquet table dressed with an elegant spray of pink florals and twinkling tea lights.

Dior’s lovely fragrance ambassador guided us along an olfactory journey, punctuated with a dreamy description of each of the three scents—DIORIVIERIA, EDEN-ROC, and JASMIN DES ANGES—with a spritz for each of us, illustrating the timeless tales of Christian Dior’s remarkable life as a purveyor of sartorial elegance, and his indelible imprint on contemporary couture—while the hotel’s cherished chefs elegantly described the flavors and ingredients of each course, and our sommelier explained the taste profile and purposeful pairing of each selected wine, making for a marvelous melange and merging of flavor and fragrance.

The Beverly Hills Hotel’s celebrated chefs prepared an exquisite culinary experience that commenced with a light and creamy chilled Vichyssoise (a summer soup blending potatoes, leeks and onion—originally imagined by the Head Chef of the Ritz Carlton in New York City, Louis Diat, in the early 20th century) accompanied by a truffle petit croque for decadent dipping.

Moving on to the next savory sensation—and perhaps my favorite flavor of the evening—a perfect petit choux (puff pastry) injected with lemon and chive-whipped crème fraîche, topped with a generous garnish of caviar and edible gold leaf—for the pinnacle of a presentation that was truly la pièce de résistance.

Next came a sweet summer salad of grilled peaches and goat cheese on a nest of arugula, drizzled with lavender honey and sprinkled with marcona almonds, paired with a zesty New Zealand Sauvignon Blanc.

For our entrée, we diners beheld a beautiful Branzino fillet, dotted with heirloom cherry tomatoes, zante currants, and pine nuts, in a lemon caper sauce. The hotel’s supreme sommelier selected a 2021 Clos de Lambrays from Morey-Saint-Denis.

Concluding the culinary coup was a traditional Tropézienne—individualized with spongy halves of brioche sandwiching juicy raspberries and rich crème pâtissière, topped with a light dusting of sugar. Equally moist and marvelous, with a swallow of sweet Sauternes —a robust dessert wine—from Chateau d’Yquem.

As a parting gift, each guest was gifted a generous full-size bottle of DIORIVIERA to keep and unbox at home—which you can also watch here.

Celebrating 60 years of elegance and French flair with a black-tie sunset soirée at the Sofitel Los Angeles at Beverly Hills.

It was truly a night to remember, with French-themed signature cocktails, a live band playing Edith Piaf tunes, ice sculptures, macaron towers and Croquembouche, decadent desserts and luxe giveaways—all with surrounding sunset views of the Hollywood Hills from the sleek Sofitel rooftop.

The evening also unveiled the hotel’s exclusive collaboration with Courbet, the first sustainable jeweler on Place Vendôme in Paris.

Since opening its flagship hotel in the Alsace region of Strasbourg in the 1960s, Sofitel has become synonymous with elegant French hospitality and continues its legacy with locations all across the globe.

A Night to Remember

The evening was a grand celebration, attended by esteemed guests and notable figures, including actors Gillian Anderson and Dali Benssalah, who recently headlined Sofitel’s new brand campaign. The ambiance was set with live music, talented fashion illustrators, personalized champagne glasses, and decadent seafood and dessert displays. The highlight of the night was our exclusive collaboration with Courbet, the first sustainable jeweler on Place Vendôme in Paris. One lucky attendee walked away with a piece from this exquisite jewelry collection, specially designed to honor our diamond anniversary.

1964

SOFITEL IS BORN WITH ITS FIRST 5-STAR HOTEL in Strasbourg, in the heart of a region renowned for its history and haute cuisine. This inauguration marks the start of a mission to redefine the art of hospitality with a French Zest.

1970's

SOFITEL IS EXPORTED ABROAD. The brand embarks on a rapid international expansion trajectory as it opens 5-star hotels in Asia, Europe, and America. A first step toward sharing the French flair with the world.

1980

SOFITEL JOINS WHAT WILL BECOME THE ACCOR GROUP. The brand is purchased by Paul Dubrule and G.rardP.lisson under the SIEH banner, as the icon of the French luxury hospitality industry, with a network at the time of 43 hotels and two thalassotherapy centers. Later on, the two prominent French businessmen will create the Accor group in 1983.

1990's & 2000's

SOFITEL CONTINUES TO MAKE INROADS AROUND THE WORLD as it opens hotels that rapidly reach icon status: in the United States (with an emblematic hotel in New York near the famed Fifth Avenue), in South America (Buenos Aires, Bogot.), in Asia (Hanoi), in Europe (Lisbon, Biarritz, Amsterdam) and in the Pacific (Melbourne, Sydney).

2003

SLEEP IS, MORE THAN EVER, A PRIORITY. To ensure restful nights for its guests, the brand introduces Sofitel MyBed™: soft, snug bedding including a topper that quickly earns accolades. This is “flexible” comfort, groundbreaking in the hospitality industry. Since then, Sofitel has also opened an online boutique where the public can purchase its most successful products such as its base, mattress, topper and comforters. 2009

It also unveils new carefully selected partnerships to disseminate the brand’s values more widely. To top it all off, the year will see a host of openings and the renovation of a number of iconic properties.

When The Beverly Hilton asks you to do a retro photoshoot, you say yes!

With its signature swinging ‘60s vibes and visions of sophisticated glamour around every corner, checking into The Beverly Hilton is probably the closest any of us will ever come to actually turning back the clock and taking a trip back in time to Hollywood’s Golden Age.

To showcase the hotel’s recent collaboration with Hollywood Classic Cars, I had so much fun styling and modeling two retro looks to complement my two very special costars—a red vintage Porsche Cayenne and a baby blue 1959 Corvette.

I’ve always dreamed of becoming a Bond Girl, which was the inspiration behind Look #1, while Look #2 had me feeling like one of the original ladies who lunch, like Babe Paley or one of Truman Capote’s Swans—with plenty of Chanel accessories, of course.

known as much for its larger-than-life milkshakes and Pinterest-worthy floral installation as for its colorful array of macarons, decadent merveilleux cakes, and petite canalés, the folks at Le Mervetty know a thing or two about aesthetics.

With made-to-order cakes and signature merengue garnish on everything from bite-sized treats to individual teapots (see below), this Beverly Hills gem is a must-visit for any Chic Française looking for some comforts of home—with the LA treatment.

There’s nothing quite like being in France to celebrate Bastille Day—the French equivalent of our American Independence Day. Just as the 4th of July signaled the culmination of the American Revolution in 1776 that led to the United States disassociating from Great Britain, Bastille Day marks the anniversary of the storming of the Bastille, the climax of the French Revolution in 1789, which was equally as bloody and gruesome (let’s not forget the gleeful beheading of Marie Antoinette, for one) but also paved the way for a future of fireworks, flag waving, and national pride.

A few hundred years later, le 14 Juillet is still celebrated just a few weeks after the 4th of July, and if you haven’t gotten all of that patriotism out of your system, there many ways to show affection for the beautiful country that we all know and love, and many of us consider a home-away-from-home (Who could forget the famous Josephine Baker quote: America is my country, but Paris is my hometown?). One of the best ways to celebrate this year, during the head- scratcher of a summer that is life in 2020, is to support local French restaurants and businesses.

One of my personal favorite spots is Héritage Fine Wines in Beverly Hills.

Known as much for its summer rooftop soirées (excluding this year, sad face) and occasional drop-in performances by John Legend, as for its impressive body of French wines, you’d be hard-pressed to find a better apéro spot in the city. With a to-die-for selection of gourmet meats and cheeses, creating an a la carte charcuterie board has never been easier, and a summer Happy Hour menu that includes $1 oysters can’t be beat. A glass of Taittinger always satisfies my bubbles craving, or sample a flight of fresh-off-the-vineyard whites, reds, and rosés out on the terrace, admiring the stream of passersby from nearby Rodeo Drive.

Helmed by French expatriates and expert winemakers, founder Jordan Andrieu and sommelier Charles Denois—born and bred on vineyards in Burgundy and Champagne, France, respectively—with their keen noses for a proper bouquet, have cultivated a curated library of French wines, all available by the bottle, and for purchase at the on-site wine shop.

Once sufficiently wined and dined, it’s also worth noting that under normal non-pandemic circumstances, one could head down the street to the Sofitel Beverly Hills for its annual Bastille Day celebration festivities, complete with can-can dancers, a French flag photo booth, and gift bags and raffle prizes sponsored by local French institutions like L’Alliance Française and XL Airways.

But, c’est la vie, as they say. There’s always next year.

The pop-up dining experience trend is really taking off in Los Angeles, and one of the absolute best of the year, hands down, is The Summer of Ludo and Gilles—although I may be biased, given my unabashed affection for the seaside cuisine of the French Riviera.

Nestled inside the charmingly European and picturesque courtyard of the Montage Beverly Hills, this epic culinary collaboration is the brainchild of renowned French restaurateurs Ludo Lefebvre—the producer of many an LA French eatery (including the beloved Trois Mecs in Hollywood) and known to many as America’s French Chef—and Gilles Epié, Culinary Director of the Montage Beverly Hills and known to many as the Original Rock Star Chef. Both have carved illustrious careers, leaving a combined trail of Michelin stars and television stints in their wake since their earlier days together at L’Orangerie in Paris.

In my exclusive Q&A with these two French visionaries below, find out what to expect from the most buzzed-about dining experience of the summer—and be sure to make a reservation before the three-month run ends in late September.


TCA: What is your idea of the ideal French dining experience, and how is it incorporated into the Ludo & Gilles pop-up?

Chef Gilles: The French appreciate the art of dining, they have a passion for food and they take their time to fully enjoy it. Summer of Ludo & Gilles is like two friends together on vacation, cooking colorful food from the south of France using the freshest California produce. 

Chef Ludo: For me, when I think of the ideal French dining experience, it's with white tablecloths and beautiful china. When I think of my ideal dining experience in the South of France, it’s outside in the garden or near the beach. Summer of Ludo & Gilles incorporates the best of both worlds, with a beautiful setting provided by Montage Beverly Hills but with the simple, delicious food of the South of France.

TCA: Which elements of the South of France specifically served as inspiration for the menu?

Chef Gilles: The cuisine of the South of France features traditional dishes that are influenced by other countries around the Mediterranean Sea. The open-air farmers markets in Los Angeles provide delicious fruits, vegetables, olives, herbs and spices which complement the fish and meat dishes. We simply can’t go wrong with these amazing flavors!

Chef Ludo: The three most important elements of cuisine from the South of France are: fresh, local, farmer's market vegetables, fresh fish, and Extra Virgin Olive Oil. We wanted to incorporate all of the wonderful produce and ingredients we can find here in Southern California to utilize them in traditional dishes from the South of France.

TCA: What do you love most about French cuisine and how does it differ from American dining?

Chef Gilles: Dining in France is an experience and there is a wealth of traditional recipes that have been perfected over time. Whether you're at a French cafe, family-owned bistro or elegant restaurant, everyone has an opinion on food. In the U.S., diners enjoy recipes that are innovative and healthy. Americans definitely spend less time at the dining table, I think they should try to enjoy life a little bit more and I hope that our food entices them to do exactly that!

Chef Ludo: French cuisine has a long and rich history rooted in tradition. Every dish has a reason for why and when it is prepared, and there are so many different elements which go into the story behind it. I feel that true American cuisine is influenced by the mix of cultures that live here and it is much more difficult to define because of that.

TCA: In what way does this inspired menu put a unique spin on traditional French fare?

Chef Gilles: This is California and people are watching their figures. I don't cook with butter or heavy sauces. Clients can indulge their culinary passion while eating flavorful and healthy dishes using impeccable ingredients.

Chef Ludo: This menu is actually very traditional and we did not play with the dishes too much. Gilles and I really wanted to share the dishes that we remember from our childhood.

TCA: Which menu item has been most popular so far/ are you most excited to share?

Chef Gilles: The item that is the most popular is definitely the eggs caviar (a dish Ludo and I have been doing since our days at L’Orangerie). But personally the dish that I’m the most excited to share with our clientele is the pissaladière because it’s an authentic dish from Nice and probably something many people have never tried! And of course the Branzino, both Ludo and I created this recipe together, it basically represents everything we love!

Chef Ludo: The hors d’oeuvres cart which comes with 12 different salads and is accompanied by dipping breads has been really popular. Guests also really seem to be enjoying the fish soup as well! My favorite thing on the menu are the grilled prawns with garlic butter and fresh herbs. It's very simple, but so delicious! 

TCA: What do you think is missing from the LA restaurant scene that can be found at Ludo & Gilles?

Chef Gilles: It's the only restaurant in LA with two Michelin-starred chefs creating a truly French fine dining experience together, in a relaxed and beautiful space...We have both cooked for Presidents and movie stars, but we're thrilled to bring our cuisine to food lovers from every walk of life.

Chef Ludo: Our goal with Summer of Ludo & Gilles was to create a space for our guests to experience the South of France without ever leaving LA. I have so many fond memories of my own summers when I was a kid with my family in the South of France and wanted to share that with our guests.

TCA: What makes The Montage the perfect home for this dining experience?

Chef Gilles: Montage Beverly Hills is a world-class hotel with an international discerning clientele. They feel at home here dining on Mediterranean cuisine in a sophisticated atmosphere.

Chef Ludo: Montage Beverly Hills had all the resources I needed, a beautiful kitchen and a great team, to pop-up in their restaurant, plus their location and outdoor courtyard feels like you're in a little village in the South of France - the perfect escape from the hectic life of LA. It was the ideal setting to help transport the guests through both food and the space into the South of France.  

TCA: What do you most hope to accomplish during the run of this pop up?

Chef Gilles: We’d like to put the Summer of Ludo & Gilles on the culinary map! 

Chef Ludo: Most importantly, I want to share my love of this tradition of food with our guests so they can experience something different and new! I hope to give some inspiration to the guests about South of France cuisine so that they travel and create memories of their own.
